What is Inflammation?
Lately, I’ve been reading more about inflammation and how it impacts our bodies. All inflammation isn’t harmful. It is nature’s way to heal injuries and fight illness.
However, long-term, low-level inflammation wreaks havoc with our bodies. A John Hopkins study links inflammation to Alzheimer’s, cancer, diabetes, lupus, rheumatoid arthritis, and heart issues. Getting inflammation under control may help prevent these debilitating diseases.
In the study, doctors noted a link between poor lifestyle habits and high levels of blood markers indicating low-level inflammation. So, what is the advice? The same advice doctors suggested for years: get sleep, eat well, exercise, and manage stress.
What is the Anti-Inflammatory Diet?
According to Harvard University, overeating red meat, fried foods, highly refined foods, and sugar promotes inflammation. The anti-Inflammatory diet encourages eating fewer processed foods, choosing lean proteins, and including an abundance of vegetables, fruits, nuts, and whole grains. Unlike some diets that simply limit fat or carbohydrates, the anti-inflammatory diet encourages choosing the right foods within these categories to help limit the body’s inflammatory responses to environmental triggers.

I received a preview copy of I Love My Instant Pot: Anti-Inflammatory Diet Recipe Book in the mail this week. After reading through it, I thought you may like to learn more about it, too. It’s the first book of anti-inflammatory recipes for the Instant Pot from a major publisher.
The book features 175 anti-inflammatory recipes broken down into easy-to-find categories. Also, many recipes include beautiful, full-color, photos to get your appetite going! While I favor the vegetarian and seafood chapters, the book covers an entire range of food. And, the author didn’t forget breakfast and dessert.
Wait, desserts? Nope, these are not sticky, sweet, junky desserts. Instead, they use natural sweeteners, like stevia and monk fruit.
In addition to a nice introduction explaining the Anti-Inflammatory Diet, this Instant Pot recipe book details things you may need for your kitchen, such as an Instant Pot. It also includes a metric conversion chart and index. Plus, all the recipes use common ingredients available at any grocery store. In fact, you probably already have most ingredients in your pantry.
Did I mention these recipes are fast? Even on busy weeknights, you’ll have dinner on the table faster than you can say “let’s order pizza.”

Next, I want to try the Raspberry Steel Cut Oatmeal Bars or the Asian Noodle Bowls. Oh! Or, the shrimp paella.

Coconut Curry Lentil Chickpea Bowls with Kale
If there is such a thing as “healthy comfort food,” this dish definitely qualifies. It’s a dish that will make you feel happy when you’re eating it, enjoying the warming spices and creamy texture. Of course, the ease of preparation makes it even more attractive! This recipe is sure to make it into your regular rotation.
Place all of the ingredients, except the kale, lime juice, and cilantro leaves, in the inner pot and stir to combine well. Secure the lid.
Press the Manual or Pressure Cook button and adjust the time to 8 minutes.
When the timer beeps, let pressure release naturally until float valve drops and then unlock lid.
Stir in the kale and lime juice. Spoon into bowls and serve topped with cilantro.
