Garlic moves from the sidelines to being a show-stopping headliner when you roast it. It takes on a sweeter flavor and the bite mellows. The creamy texture almost melts in your mouth. You’d never recognize it as garlic!
Yields: 12
Preheat oven to 375
First, line each individual cup of a muffin tin with foil. Make sure that enough hangs over to wrap the garlic. Spray each foil with cooking spray.
Next, use a sharp knife. Slice off the top of the garlic bulb slicing through all the cloves. Peel off the white, papery casing, too. Repeat for all 12 garlic bulbs.

Place each peeled and sliced bulb into the lined muffin tin. Drizzle with a bit of olive oil. Sprinkle with salt and Italian seasonings.

Fold foil around each prepared garlic bulb.

Bake for 30-40 minutes. Allow it to cool enough that you aren't getting scorched on the foil and unwrap. Display the roasted garlic on a plate. The garlic will darken in color and develop a slightly sweet, mellow flavor.
