Pasteli Honey Sesame Bars

The Mediterranean Diet became popularized in the early 90’s. This healthy lifestyle survives today and for good reason. It’s full of healthy fats, natural foods, whole grains, nuts, and very little meat. It even allows for some delicious (and secretly, nutritious) snacks and desserts, like these Pasteli – or Honey Sesame Bars. It’s no surprise that many dieticians recommend following this fun and easy way of eating.

I found this recipe in the Everything Green Mediterranean Cookbook by Peter Minaki. This Mediterranean Cookbook contains an array of 200 healthy and delicious recipes. Packed with twelve chapters of information, the author arms you with everything you need to know to get started.

Most of the recipes are vegetarian, and it even has a recipe for Vegetarian Gyros (which I almost opted to share). But there are a few meat recipes for poultry and fish, too. I decided to share this Honey Sesame Bar recipe since I have very few snacks and dessert recipes. They aren’t too sweet nor are they too fussy. It pairs well with a cup of hot tea, too!

In addition to a tasty afternoon snack, these treats make and easy, not-too-sweet breakfast. Pair it with some fresh fruit, such as dates or figs, for a well-rounded breakfast. One recipe makes 20 bars and they freeze well for future meals.

Pasteli Honey Sesame Bars Recipe

 1 ½ cups Honey
 1 ½ cups Toasted Sesame Seeds
 ½ cup roughly chopped roasted unsalted almonds
 1 tbsp grated orange zest
 ¼ tsp ground cinnamon

Line a baking sheet with parchment paper and set aside.

Pour honey into a medium saucepan and clip a candy thermometer to the side of the pan. Heat over medium heat until the temperature reaches 250°F.

Add sesame seeds, almonds, orange zest, and cinnamon. Cook and stir another 3 minutes.

Pour the mixture onto prepared baking sheet and lay another piece of parchment paper on top.

Use a rolling pin to roll out the mixture to 1⁄4" thickness. Remove the top sheet of parchment and allow about 30 minutes to cool completely.

Cut into square or diamond shapes and serve. Store in an airtight container with parchment paper placed between layers up to 1 week.
