This simple and delicious recipe combines nutty farro and sweet agave (or maple syrup) with tasty, nutritious roasted vegetables. It's a colorful dish that comes together in minutes!

Oven Roasted Sprouts and Farro

 ½ cup farro, uncooked
 ½ yellow pepper, cut into strips
 1 cup Brussels Sprouts, sliced in half
 4 oz carrots, sliced
 4 oz red potatoes, cut bite-sized
 ½ tsp rosemary
 ½ tsp sea salt
  tsp ground black pepper
 1 tbsp balsamic vinegar
 ¾ tbsp agave or maple syrup

Preheat oven to 425 and prepare farro according to package directions.


Spritz veggies with olive oil and toss with rosemary, salt, and pepper.


Place veggies in a single layer on a foil-lined baking sheet.


Cover with foil and tightly seal the edges.


Bake for 30 minutes - stirring about halfway through (and re-cover). Or you can shake the pan.


Toss with balsamic vinegar and agave.


Divide farro between 2 bowls and top with veggies.
