This vegan slow cooker navy bean soup maintains the traditional smokey flavor that makes Navy Bean Soup so popular! Round out the meal with some crusty bread. I don't soak my beans and this recipe always turns out great!
1lbdried navy beans, rinsed and sorted
1large carrot, sliced
1celery stalk; chopped
½yellow onion; diced
3cloves garlic, minced
Salt and pepper to taste
114 oz can diced tomatoes
3cupsbaby spinach leaves
Add all ingredients to the slow cooker, except spinach and tomatoes.
Cook on low for 6-8 hours or 4-6 hours on high.
Stir in tomatoes. Cook for another hour on low or 30 minutes on high.
Stir in baby spinach and serve.
