Sweet Potato Hash is a filling dish with a hearty, earthy flavor. While downright delicious, this plate of comfort food won’t break your calorie budget and pack a nutritional wallop!
Microwave cubed sweet potatoes for about 8 minutes. They should be a little tender, but not too soft. We will be sauteing them a little more.
Spray a skillet with a little cooking spray. Add microwaved sweet potatoes. Saute until they are seared and have little crust. Remove potatoes from pan. Set aside. They should look like this.
Add peppers, onions, green onion bottoms, to the pan and saute for about 5 minutes till the vegetables have softened.
Add paprika and cilantro. Stir and saute for about another minute.
Add beans and potatoes to vegetable mixture. Heat through and drizzle with lime juice.
Serve on individual plates. Top with fried egg and sliced avocado. Sprinkle with cilantro and green onion tops.
